This is classic Mediterranean fare that can be enjoyed with either a dairy or a meat meal. It makes a lovely antipasto or meze, or a side dish or salad. For a pasta sauce, simply purée the tomatoes – you can use your hands to squeeze all the juices out.

Ingredients

  • 60 ml/4 tbsp extra virgin olive oil, plus extra for greasing
  • 12 plum tomatoes

Method

  1. Preheat the oven to 230°C/450°F/Gas 8. Select an ovenproof dish that will hold all the tomatoes snugly in a single layer. Grease it lightly with olive oil.
