Shammi kebabs are not, as you might think from the name, chunks of skewered meat. Rather, they are made of simmered lamb, which is ground up with spices and moulded into patties. Once covered in gram flour and beaten egg, they are then fried to a crisp. The dish is part of the Indian Jewish culinary repertoire.

Ingredients

  • 2 onions, finely chopped
  • 250 g/9 oz lean lamb, boned and cubed

Method

  1. Put the first seven ingredients and the water into a large pan with salt, and bring to the boil. Simmer, covered, until the meat and dhal are cooked. Remove the lid and cook for a few more minutes to reduce the excess liquid. Set aside to cool.
