Wrapping the fish with lime, tomato and basil into an envelope of paper which is sealed and roasted, is a delicious way to prepare salmon. The aromatic moisture of the citrus and tomatoes creates a perfumed steam to cook the fish in. Open the parcel and whoosh! The most fragrant steam escapes, leaving a succulent, perfectly cooked fish.

Ingredients

  • 50 g/2 oz/¼ cup butt

  1. Grate the rind from the lime and put it in a small bowl. Cut the lime into eight slices and set aside. Add the butter and basil to the lime rind and mix well. Roll the mixture into a cylinder shape, wrap in greaseproof (waxed) paper or baking parchment and chill.
