The Jewish communities of the Caribbean Islands date back to the arrival of Spanish and Portuguese families fleeing the Spanish Inquisition. This dish, full of Caribbean flavours, can be made with any kosher fish – here it is cod.

Ingredients

  • 45 ml/3 tbsp sunflower oil
  • 6 shallots
  • 1

Method

  1. Slowly heat the oil in a frying pan. Finely chop the shallots and add them to the frying pan. Cook for 5 minutes until soft. Crush a peeled garlic clove into the frying pan and add the chilli. Cook for a further 2 minutes, then stir in the tomatoes, bay leaves, cayenne pepper, allspice and lime juice, with a little salt to taste.
