Chicken patties, or bitki, are a favourite Ashkenazic dish of Poland, Russia and Eastern Europe. Whipped egg whites added to the chicken mixture lighten the texture.

  1. Heat 15 ml/1 tbsp of the oil in a pan and fry the mushrooms for 5 minutes until soft and all the juices have evaporated. Allow to cool.
