These patties of minced lamb, spiced with aromatic herbs and seasonings, are doted on by both Jewish and non-Jewish communities from the Middle East right through to the Indian subcontinent. Serve a chopped vegetable salad on the side, or tender flatbread to wrap it up in, with a hot sauce such as zchug.

Ingredients

  • 450 g/1 lb minced (ground) lamb
  • 1–2 large slices of French bread, v

Method

  1. Put the lamb, crumbled bread, coriander, garlic, onion, lemon juice, spices, tomato purée, cayenne pepper or chillies and seasoning in a large bowl. Mix well. If the mixture does not bind together, add the beaten egg and a little more bread.
