Italian Jews have favoured artichokes for millennia. This probably goes back to biblical times in the land that is now Israel, where they were gathered wild. The classic roman dish of fried artichokes alla giudia actually came from the old Jews of Rome and can still be enjoyed at its best in the restaurants of the ghetto. This makes a lovely pesach dish.
