Spicy kebabs are served with hummus throughout the Middle East. The earthy chickpeas form the basis of the zesty sauce. Spice the meat as hot as you wish, or leave it mild and serve with a hot sauce such as harissa or Zchug. You will need metal skewers with wide blades for these kebabs to hold the pounded meat in place so that it resembles a sheath on a sword when serving. The whole sheath can be pushed off the skewer.
