Jews are said to have helped spread new world spices and foods throughout Europe, as the discovery of these goods coincided with the expulsion from Spain, and many Jews took the new ingredients with them. Hungary certainly embraced the mild dried pepper, paprika – its cuisine has not been the same since. Goulash might be defined as a stew or a soup, full of meat and red with paprika. Here it is enriched with dumplings to make a classic of hot, flavoursome Eastern European food.
