This Tian, or Kugel, is from the region of thrace, which borders Bulgaria and Greece. It is a layering of the fresh tomatoes of late summer, drizzled with olive oil and sprinkled with crumbs. The crumbs help to absorb the spicy juices of the tomatoes as they bake. As delicious served cold as it is hot, it is a nice dish to serve in the sukkah.
