This is a traditional Shabbat pasta dish known as pasta Fredda to the once large and Vibrant Tuscan Jewish community. Today, al dente noodles are dressed with garlic, parsley and olive oil and eaten cold, as Shabbat is the day of the week when no cooking is allowed. Serve as a first course or as an accompaniment to a meat, fish or dairy meal.
