These Polish “ravioli” are filled with spiced mashed potato and served with fried onions, melted butter or sour cream. Pierogi may be filled with cheese, sauerkraut, mushrooms, or any variety of fillings satisfying enough to ward off the coldest winter.

Ingredients

  • 675 g/ lb baking potatoes, peeled and cut into chunks
  • 50–75 g/2–3

Method

  1. Cook the potatoes in a large pan of salted boiling water until tender. Drain well. Meanwhile, melt the butter in a frying pan, add the onions and fry over a medium heat for about 10 minutes, or until browned.
  2. Mash the potatoes, then stir in the fried onions and leave to cool. When cool, add the eggs and mix together. Season generously.
