In Roman cooking, Artichokes were originally a Jewish food. It is said that the bitterness of Artichokes partners the historical bitterness of Jewish life, but perhaps the Jews simply discovered the potential of these edible thistles first, gathering them where they grew wild. This delicious pasta dish can be made with flat pasta, such as pappardelle, or with butterfly-shaped farfalle. For meat meals, omit the cheese.
