In Cyprus, Firm, salty halloumi cheese is often served fried for breakfast or supper. It is also delicious with sweet, juicy fruit such as watermelon or, as here, with grapes. This updated Israeli version is fabulous on a summer’s day.

Ingredients

For the dressing

  • 60 ml/4 tbsp olive oil

  1. To make the dressing, combine the olive oil, lemon juice and sugar in a bowl and beat together with a whisk. Season. Stir in the thyme or dill and set aside.
