This dish of Humble cabbage is perfumed with an array of aromatic spices and then braised. The leaves become silky and the spices become more complex in their balance. The dish is delicious eaten either warm or cool.

Ingredients

  • 1 green or white cabbage, thinly sliced
  • 30–60 ml/2–4 tbsp olive oil

Method

  1. Cook the cabbage in a pan of boiling water for 5–8 minutes, or until tender. Drain well and set aside.
  2. Meanwhile, heat the oil in a pan, add the onions and fry until softened, then add half the garlic and the green pepper and cook for 3–4 minutes, or until the pepper softens but the garlic does not turn brown.
