How many kinds of dumplings are there in Eastern Europe? these are enriched with Tangy white cheese and hail from Ukraine. Serve as a side dish to a dairy supper, perhaps alongside a big vegetable casserole.

  • 115 g/4 oz/1 cup self-raising (self-rising) flour

Method

  1. Sift the flour into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs.
  2. Stir the cheese and herbs into the mixture. Season with salt and pepper. Add the cold water and mix to a firm dough. Rinse your hands to prevent the mixture sticking to them, then shape the dough into 12 balls.
