These crispy fried morsels feature prominently in the Sephardic kitchen. According to accounts of the fleeing hebrew slaves, leeks and garlic were missing from their diet and life without them was hardly worth living.

Ingredients

  • 4 large leeks, total weight about 1kg/2¼ lb, thickly sliced
  • 120–175 ml/4–6 fl oz/½–¾

Method

  1. Chop the leeks roughly. Put in a bowl and combine with the matzo meal, eggs, herbs, nutmeg and seasoning.

  2. Cook the leeks in salted boiling water for 5 minutes, or until just tender and bright green. Drain and leave to cool.
