Two simple ingredients are prepared separately and then tossed together to create the perfect combination. These potatoes go very well with a simple meat dish, such as steak or roast chicken. Alternatively, serve them with a bowl of green beans tossed in butter.


  • 900 g/2 lb floury potatoes
  • olive oil or vegetable oil, for shallow-frying

  1. Scrub the potatoes clean and cook in a large pan with plenty of boiling water for 10 minutes.

  2. Drain the potatoes through a colander and leave to cool slightly. When the potatoes are cool enough to handle, peel and finely slice them.</
