The potato was first introduced to India by Dutch traders and was wholeheartedly embraced by that spicy cuisine. This is a typical bene Israel dish. The bene Israel of Western and Northern India enjoyed the foods and flavours of their Muslim and Hindu neighbours and added their own touches. Their food is less chilli-hot than that of the Cochinese Jews or Baghdadi Jews of Calcutta.
