This creamy mousse is fluffy and light. Scented with rose water and flavoured with berries, it is a summer treat.

Ingredients

  • 225 g/8 oz/1 cup full-fat soft white (farmer’s) cheese

Method

  1. Beat the cheese in a bowl with the sour cream and egg yolks until the cheese has thoroughly softened. Stir in half of the sugar.
  2. Whisk the egg whites in another bowl until they are stiff, then whisk in the remaining sugar. Fold the egg whites into the cheese mixture and set aside to chill while you prepare the fruit sauce.
