Raisin and lemon-scented cheesecake in an almond crust is a delicious seasonal treat, often served in cafés during the Eastern European spring.

Ingredients

  • 50 g/2 oz/4 tbsp butter

Method

  1. Rub the butter into the flour until it resembles fine breadcrumbs. Stir in the sugar and almonds. Add the water and mix to a dough. Gently knead on a floured surface, wrap in clear film (plastic wrap) and chill for 30 minutes.
