Central European Jews made pancakes for every Occasion. These are tender and thin and filled with delectable cinnamon-scented sugared apples.

Ingredients

  • 115 g/4 oz/1 cup plain (all-purpose) flour
  • pinch

Method

  1. Melt the butter for the filling in a heavy frying pan. When the foam subsides, add the apple slices. Sprinkle a mixture of the sugar and cinnamon over the apples. Cook, stirring occasionally, until the apples are soft and golden brown. Set aside.
