A delicious and simple dessert that makes wonderful use of a windfall of fruit whether from your garden or from the market. Use an interesting combination of sweet and tart flavours to make the medley even tastier. Serve chilled.

  • 115–175 g/4–6 oz/½–¾ cup sugar, depending on the tartness of the fruit

Method

  1. Put the sugar and water into a stainless steel pan and bring to the boil. Add the lemon juice and rind and the two pieces of cinnamon stick. Cook for 1 minute.
  2. Add the prepared fruit to the pan and cook for 2–3 minutes only. Remove the fruit and cinnamon stick with a slotted spoon.
