Almond cake such as this probably has its origins in the Jewish community of Venice. Its popularity was spread by Catherine de Medici when she became queen of France in 1547.

  1. Preheat the oven to 180°C/350°F/Gas 4. Lightly grease two 30–38cm/12–15in square cake tins (pans).
  2. Put the ground almonds, matzo meal and salt in a bowl and mix together.
