The word horef is roughly translated from hebrew as hot pepper and usually refers to a spicy hot chilli sauce. This Israeli relish simmers sweet and hot peppers along with tomatoes and middle eastern spices. It is good with roasted or barbecued meats, chicken or scrambled eggs, or simply served to dip into with fresh pitta bread.

Ingredients

  • 45 ml/3 tbsp olive oil
  • 1 green (bell) pepper, chopped or sliced

Method

  1. Heat the olive oil in a large, heavy pan, add the chopped or sliced green pepper, large and small chillies and garlic. Fry over a medium heat, stirring, for about 10 minutes, or until the peppers are softened. (Be careful not to let the garlic brown.)
