Served with a fresh herb platter and/or a green salad, this wonderfully tasty vegetarian dish makes a meal in itself, but it works equally well as an accompaniment to roast chicken or lamb. You can substitute the barberries with 1¼ cups (225 g) semi-sweet dried cranberries. There is no need to caramelize these—just add them in step 5 with the almonds and pistachios.
