Bulgur is made by removing the husks from wheat, then steaming, drying and crushing the berries. It’s an ancient way of preparing wheat and used to be a popular ingredient in Persian cooking, but around the fifteenth century rice began to take its place. Dami is the Persian term for grains mixed with herbs and cooked in one pot. The combination of bulgur, with dill and mung beans results in a perfectly balanced dish, especially nutritious for vegetarians and vegans.
