These are not traditional Yazdi cupcakes, as in my Food of Life cookbook. Here, I have replaced the flour with almond flour and the yogurt with orange juice, making these light and fluffy in texture and with a lovely fruity flavor. Combining almonds, apples, and honey goes back at least several thousand years in Persian cooking.

Method

  1. preheat the oven to 350°F (180°C). Line 2 muffin pans (capable of holding 12 muffins each) with paper cups.
  2. In a large mixing bowl, combine the oil, honey, orange zest and juice, and orange blossom water, and beat for 1 minute. Add the eggs one by one.
