Iranians were coffee drinkers from the sixteenth century, but, since taking up tea in the 19th century, they have turned tea making into an art form. A cup of tea must please all the senses. Its color—light red rather than dark brown—should be appreciated, hence it is served in a small glass and not a china cup. It should be steeped for just the right length of time, neither too little nor too long. The temperature and smell are also important: it must be hot and with a heavenly aroma. Tea
