This ingenious pocketbread is the brainchild of Karen from Mission Pie. She got her hands on some killer sundried tomatoes from a local farm and excitedly handed them over one day, suggesting that I toss them into some pocketbreads along with some bacon. The resulting pocketbread was an almost ready-made BLT—the only thing you’re missing is the lettuce. So bake these puppies up, then slice them in half and squish in some lettuce. And maybe some mayonnaise, salt, and pepper, too.
