This is another delicious combination that I picked up from Dave Miller. He makes an incredible loaf that also includes walnuts, but the fig-fennel one-two punch is enough to make this one of my favorite pocketbreads of all time. Just coarsely chop the figs and let them soak overnight in a soaker, and grind the fennel seeds right before adding to your dough. Then make those pocketbreads and have a party.
