Method

This batter requires a stronger flour so the larger amount of batter will bake without falling. Use a 9½- to 10-inch pan. Use 4 tablespoons (½ stick) unsalted butter, 1 teaspoon vanilla extract, 8 large eggs, at room temperature, ¾ cup sugar, cups sifted all-purpose flour, and ¼ teaspoon salt. Bake 35 to 40 minutes.
