Omit the coffee icing. Omit the milk, cornstarch, sugar, and egg yolks for the pastry cream. Increase the heavy cream to cups and beat until stiff. Add the vanilla, then beat in the dissolved gelatin. Let stand in an ice-water bath until chilled and firm enough to spread. Sift confectioners’ sugar on top of the finished pastry.
