  • lb (675g) cup mushrooms

Method

Butter a large ovenproof baking dish well. Rinse the mushrooms quickly under water and shake dry – or just wipe with absorbent kitchen paper. Trim the stalks level with the caps.

Cream the butter in a mixing bowl to soften. Peel then crush the garlic to a purée with a little salt. Add to the butter with the chopped parsley and beat until the flavourings are blended and the butter is smo
