  • 4 oz (100 g) macaroni
  • 1 tablespoon soft white breadcrumbs

Method

Cook the macaroni in a large pan of boiling salted water until tender. Meanwhile, melt the butter for the sauce in a saucepan over low heat. Stir in the flour and cook gently for 1 minute. Gradually pour in the milk, stirring all the time, and bring to the boil. Simmer gently, stirring, for 2–3 minutes to make a smooth sauce. Draw off the heat and season with salt and pepper.
