Pick over the cranberries. Put the sugar, water and grated orange rind into a saucepan and stir over low heat until the sugar has dissolved.
Add the cranberries and bring to the boil, then simmer, uncovered, for about 5 minutes, or until cranberry skins pop. Allow to cool slightly, then turn into a small serving bowl and leave until completely cool. Don’t reserve this delicious sauce fo
