  • dash of French mustard
  • 1 tablespoon wine vinegar
  • salt and freshly milled pepper

Method

Mix the mustard, vinegar and a good seasoning of salt and pepper with a fork until blended. Add the oil and beat vigorously until an emulsion is formed. (The oil separates on standing so beat again before using).
