Ingredients

  • 8 oz (225) button mushrooms
  • pinch of dried marjoram
  • 2 tablespoons

Method

Cut the mushrooms in thick slices and put into a mixing bowl along with the marjoram and lemon juice. Spoon over the oil and toss together to make the mushrooms shine. Season with salt and pepper and sprinkle with chopped parsley.

This is a popular salad for buffets and it also makes a good, simple dish to serve with grilled fish or roast chicken.
