Trim the celery base and leaves. Separate the stalks, snap each one in half and pull apart to remove the strings, then finely slice the celery. Quarter, core and dice the apples – do not peel if they are a pretty red colour. Put the celery and apple into a mixing bowl, pour over the oil and vinegar dressing and quickly toss together (to prevent the apples from discolouring). Chill until ready t
