  • 1 medium cucumber
  • coarse salt
  • 2 level tablespoons castor sugar

Method

Thinly slice the cucumber, place in a colander and sprinkle with coarse salt. Cover with a weighted plate and leave to stand for 30 minutes to draw the juices, then thoroughly rinse and press cucumber dry in absorbent paper.
