Snap each celery stalk in half and pull apart to remove the strings, then finely slice the celery. Quarter, core and dice the apples – do not peel if they are a pretty red colour.
Lightly whip the cream in a mixing bowl and add the mayonnaise and a squeeze of lemon juice. Quickly add the apples and the celery and toss together well. Chill until ready to serve, then turn into a serving b
