  • 1 carrot
  • 2–3 spring onions

Method

Trim the base of each chicory head and, using a pointed knife, cut out the core. Slice the chicory very finely crossways, separate out the layers and put into a mixing bowl. Peel and grate the carrot into the bowl. Trim and chop the spring onions and add to the bowl. Peel, core and grate the apple into the bowl.
