Method

Sift the flour into a mixing bowl and add the ground almonds. Add the butter in pieces and rub in with the fingertips. Sift over the icing sugar and add the grated lemon rind. Lightly mix the egg yolk with the milk and stir into the flour mixture. Mix to a rough dough in the bowl, then turn out and knead just long enough to remove the cracks.
