Sift the flour into a mixing bowl. Add the butter in pieces and rub in with the fingertips until the mixture looks like fine breadcrumbs. Stir in the sugar. Lightly beat the eggs, add to the mixture and lightly mix to a rough dough with a fork. Turn on to a floured work surface and knead just long enough to remove the cracks. Cover the pastry with upturned mixing bowl and leave to rest.
