Trim fruit according to type. Put the water and sugar into a large pan and stir over low heat until the sugar has dissolved. Bring to the boil, then lower the heat and simmer for 1 minute. Add the trimmed fruit and bring the syrup back to the boil. Then lower the heat, cover with a pan lid, and cook gently for 3–5 minutes, or until tender. Turn fruit with a perforated spoon, if necessary. Serve
