Mark the orange skins in quarters and put oranges in a bowl. Pour over boiling water to cover and leave to stand for 5 minutes, then drain. Peel the oranges in neat quarters and scrape them clean of white pith with a knife. Cut the oranges crossways in thin slices and arrange in a serving dish.
