Baked bananas with rum

  • 6 firm ripe bananas
  • juice of ½ lemon
  • 3 oz (

Method

Heat the oven to 400°F (200°C) or gas no. 6. Peel the bananas and cut in half lengthways. Arrange close together in a well-buttered baking dish and sprinkle over the lemon juice, brown sugar and cinnamon. Top with the butter in flakes.

Place in the centre of preheated oven and bake for 15 minutes. Remove from the oven and spoon over the rum. Bake for a further 5 minutes, until bananas a
