Heat the oven to 350°F (180°C) or gas no. 4. Place apricot halves with juice in a large shallow ovenproof dish. Add the brown sugar and rum and stir to mix. Peel and thickly slice the bananas and add them to the dish.
Place in preheated oven for 25 minutes, or until fruit is hot and beginning to bubble round the edges. Take straight to the table and serve with scoops of vanilla ice crea
