Peel, core and slice the apples. Put the apples, sugar and butter into a saucepan, cover with a lid, and cook gently until the apples are reduced to a Purée, then add the cinnamon and seedless raisins. Stir the mixture just long enough for the raisins to soften and plump up.
Have the pancakes hot by having them stacked on a soup plate set over a pan of simmering water. Keep them covered
