Ingredients: 1 lb (450 g) fresh strawberries; 3 tablespoons cold water; ½ oz (15 g) powdered gelatine; juice of 1 lemon; 4 oz (100 g) castor sugar; 2 egg whites; ½ pint (150 ml) double cream; 1 tablespoon orange-flavoured liqueur

Method

Hull the strawberries. Reserve 4 for decoration and press remaining strawberries through a nylon sieve to make a Purée. Put half the Purée into a medium-sized saucepan and the remainder into a mixing bowl. Put the water into a teacup, sprinkle in the gelatine and leave to soak for 5 minutes.
